Lemon Chicken with Wild Rice and Black Beans

Some Kind of Eating Thing

1-2 chicken breasts, boneless and skinless (or bone in, skin on, if you like that. Adjust cooking times accordingly, though)
1 lemon
2 cloves garlic
salt and pepper
1/2 cup chicken stock (or water)
1 cup wild rice, cooked
1 cup black beans
3/4 teaspoon ground coriander
1/2 teaspoon onion powder
1 1/2 teaspoons chili powder

Chop garlic and squeeze the juice from the lemon into a large zippable plastic bag.  Add garlic and salt and pepper, then place chicken inside.  Set in the fridge on a low shelf (to prevent cross-contamination) and let marinate for at least half an hour.  The longer you leave it, the better the flavors.  I suggest marinating it no more than five hours.
